Born in Stockholm, Sweden, and raised in Finland, Mickael Viljanen moved to Ireland in 2000 after spending time in the UK. In Ireland, he honed his craft with Paul Flynn at The Tannery and spent five years at Gregan’s Castle, where he garnered accolades such as ‘Chef of the Year’ and ‘Restaurant of the Year’ from Food & Wine Magazine, as well as RAI ‘Chef of the Year’.
